Arugula with gorgonzola, walnuts and orange

Good source of Vitamin K (38% of daily needs) and Vitamin C (40% of daily needs). Contains mono and poly-unsaturated fatty acids. Incredibly easy and quick salad to make. Can be made while main dish is being cooked.

  • Arugula, ~4 cups
  • Oranges, 1 medium, peeled and sliced
  • Gorgonzola, ~50gr/1,5oz, crumbled
  • Walnuts, a handful chopped
  • 5 Unique Extra Virgin Olive Oil, 4 TBS
  • Red Wine Vinegar, 2 TBS
  • Mustard, 2 TBS
  • Salt and Pepper to taste

  1. In a large salad bowl add 5 Olive Oil, Vinegar, Mustard, salt and pepper and mix well with a whisk.
  2. Add arugula, half the walnuts, orange pieces and cheese and mix to coat.
  3. Garnish with rest of walnuts, orange pieces and cheese and serve.
