Greek salad with goat cheese

Incredibly easy and quick to make. Can be made while main dish is being cooked.
Versatile: Use any goat cheese and try it with various herbs, such as fresh basil or mint.
Make over dish: If there is some remaining salad/dressing, add it in your morning omelet!

  • Tomatoes, 2 mediums, chopped
  • Cucumber, 1 medium, chopped
  • Sweet onion, 1/2 medium, chopped
  • Goat cheese or Feta cheese, crumbled – 1/2 cup
  • Oregano, dry, 1 tsp or to taste
  • 5 Extra Virgin Olive Oil, 2 tbs or to taste
  • Coarse sea salt, 1/2 tsp or to taste

  1. In a large salad bowl add tomatoes, cucumbers and the onion.
  2. Add 5 Olive Oil, oregano, salt, and mix to coat all vegetables.
  3. Top with crumbled cheese and give a last gentle mix. Garnish with some extra olive oil and oregano (optional).
