Green salad with cherry tomatoes and goat cheese

  • Boston lettuce, 1 head with leaves roughly cut
  • Cherry Tomatoes, 1 cup
  • Soft Goat Cheese, 50g/1,5oz crumbled
  • Pine nuts, 2 TBS toasted
  • Balsamic vinegar, 3 TBS
  • 5 Olive Oil, 3 TBS
  • Dijon mustard, 1 tsp
  • Salt and Pepper to taste (Recommendation: ~ 1/4 tsp salt and a couple of grinds of fresh pepper)

  1. In a large salad bowl add 5 olive oil, balsamic vinegar, mustard, salt, a couple of grinds of fresh pepper and mix well with a whisk or fork.
  2. Add lettuce, tomatoes and half portion of the goat cheese and toss to combine with dressing.
  3. Sprinkle the remaining goat cheese and the pine nuts over the salad.
  4. Adjust salt and pepper to taste and serve.
